Ingredients
3 or 4 zucchini
300g of prawns
2 tablespoons lemon juice
1 clove garlic
2 tablespoons pine nuts
1 tablespoon pesto
2 tablespoons extra virgin olive oil
salt and pepper q.b.
Preparation
Slice thin the zucchini with a potato peeler. Soak in a little water well salted shelled shrimp for 5 minutes. Let drain and sprinkle with lemon juice. In a pan heat the oil with a clove of garlic, add the pine nuts, toasted lightly and let them off. Combine the shrimp, cook them briefly, drain and set aside. In the same pan, cook al dente strips of zucchini. Combine the shrimp with zucchini and pine nuts, drizzle with the pesto and let it stand for 30 minutes before serving.
